Only ever sprinkle basil over the finished dish. The delicate leaves would turn brown in the heat and lose their enticing scent. Either pluck the basil into pieces by hand or finely cut with a very sharp blade, do not hack. Blends with parsley, rosemary, oregano, thyme, sage, saffron, black pepper, garlic, lemon zest. Trend: Basil goes nicely with gin cocktails.
